Iron-Fortified Infant Cereal Pancakes
1 egg 1/4 cup enriched flour 1 cup whole milk or IFIF 1 Tbsp. sugar 2 Tbsp. salad oil 1 tsp. baking powder 1 tsp. baking soda Pinch of salt 3/4 Cup Rice or Oatmeal iron-fortified infant cereal
Beat egg. Add remaining ingredients in order listed. Pour batter onto hot griddle. Turn as soon as pancakes are puffed and are full of bubbles. Cook on other side until golden brown.
Yield: 6 (4”) pancakes each containing 2 Tbsp. IFIC. Record on the Infant Menu Record as: IFIC Pancakes.
